Lemon Bars [en]

Lemon bars are prefect when it is the season to consume citrus fruits. It has the perfect balance between the sourness of the lemons and the sweetness of the sugar. It is also perfect balance between the crumbliness of the base and the creaminess of the filling.

Ingredients:
– For the base
1 3/4 cups all purpose flour
2/3 cups powdered sugar
2 tablespoons cornstarch
1/2 teaspoon salt
170 cold butter cut into cubes of 2 cm

– For the filling
4 large eggs
1 cup sugar
3 tablespoons all purpose flour
3 teaspoons zest of lemon
2/3 cup fresh lemon juice
1/3 milk
pinch of salt

Tips:
– Make sure to use cold butter. Also rest the dough between 15-30 mins in the fridge before baking it.
– When baking the base use a preheated oven at 180 C and when baking the filling use a preheated oven at 160 C.
– Before you pour the filling into the baked base make sure it is warm and not cold.
– Make sure that the lemon bars are completely cooled before you cut them into bars or squares.
